Excitingly, this Chocolate and Peanut Butter Silk Tart is entirely vegan, created with a mere EIGHT ingredients, and primarily put together using our reliable Vitamix Ascent Series blender.
The recipe is simple: First, craft the graham cracker crust using coconut oil in place of butter, then blend all the filling ingredients together in the Vitamix. It skillfully manages both silken tofu and luscious chocolate. Let it set, slice it, and voila – an indulgent treat is ready to be savored.
The silken tofu brings that cherished pudding-like consistency to this vegan chocolate and peanut butter silk tart. And, with a touch of peanut butter and a sprinkle of cinnamon, it’s a nostalgic dessert reinvented!
For those following a gluten-free diet, you can easily substitute regular graham crackers with gluten-free ones for the crust.

Ingredients
- 16 graham crackers (or GF graham crackers for a Gluten-Free version)
- ½ cup of coconut oil (liquefied)
- 12 ounces of a standard-sized block of silken tofu
- 1/2 cup almond milk
- 1 teaspoon vanilla extract
- 1/2 cup peanut or almond butter
- 2 cups of melted vegan dark chocolate chips (optional: extra grated chocolate for garnishing)
- ¼ teaspoon cinnamon
Instructions
- Kick-start by preheating your oven to 350 degrees F. Assemble the graham cracker crust by pulverizing the graham crackers to a fine crumb in a food processor or your Vitamix blender. Stir in the melted coconut oil and process until you achieve a well-mixed consistency.
- Press this graham cracker blend into a tart pan and bake for 8-10 minutes. Once done, remove it from the oven and allow it to cool. This step can be done ahead of time and stored in the refrigerator if required.
- After the crust cools down, it’s time for the filling. In a blender, combine the silken tofu, almond milk, peanut (or almond) butter, vanilla extract, melted chocolate, and cinnamon. Blend until you get a smooth texture, using a spatula as needed to ensure thorough blending.
- Pour the smooth filling into the pre-prepared graham cracker crust and let it chill for 8-24 hours. For an added touch, garnish with grated chocolate, slice, and serve!
