INGREDIENTS

  • One teaspoon of lemon juice
  • One tablespoon of soy sauce
  • 12 oz. (340 g) baby bok choy
  • 2- inch piece of ginger, peeled and minced
  • One tablespoons oil

INSTRUCTIONS

  1. Drain the bok choy and rinse it under cold running water. Remove the lower section of the bok choy stalks by cutting them off. Cut the (larger) leaves half lengthwise, then half again widthwise. Set aside. 
  2. Heat the oil in your large saucepan on medium-low heat for a while. Cook the ginger until it is fragrant, then add the bok choy and cook until the vegetables are tender. Before adding the lemon juice and soy sauce, immediately stir the pan and toss the veggies twice more to combine the flavors. Remove the bok choy from the heat as soon as it wilts, and serve it immediately afterward. BE CAREFUL NOT TO OVERCOOK THE FOOD.
