Like most other healthy and flavor-loving folks, we’ve jumped on the fresh juice and green smoothie bandwagon. The green smoothie is now a staple in my diet. I’ll get my hands on some thick, gritty juices and smoothies packed with kale and other dark green vegetables when I can.
To the point that my smoothies turn a suspicious purplish hue due to the abundance of colorful fruits and vegetables, I’ve been known to create them. Outsiders may not find it palatable, but locals know it’s delicious and healthful.
It’s a good thing I don’t have any photos of a brown smoothie to share with you today.
Instead of your typical cold-pressed juice, we’ve got something more indulgent. It’s hard to go wrong with these basil lime avocado smoothies.
Basil, lime, and avocado may sound like an odd combo, but the flavor is complex and reminiscent of something the most incredible person you know would enjoy on a summer’s day.
INGREDIENTS:
- ½ cup of tapioca pearls
- 1 cup of ice
- 1 avocado
- 9 pcs. of basil leaves
- 1 lime (juice and zest)
- ½ to ¾ cup of condensed milk (depending on your preferences for sweetness)
- 1 cup of water
INSTRUCTIONS:
1. Cook some water in a small pot by heating it to a boil. Cook the pearls of tapioca according to the package directions. Drain and place in a small basin with a bit of room temperature water after cooking, so they don’t harden and dry out.
2. Make your smoothie next. Add the remaining ingredients to your blender and blend until smooth. Blend until the mixture is completely smooth.
3. Pour your avocado smoothie into a tall glass and top it with 1/4 cup of tapioca pearls. Add a straw, garnish with lime zest if preferred, and savor!
