Startled by the term “feast”? Indeed, you read it right. This consistent midweek concoction of mine—dependable, proven, and unvarying—is nothing short of a feast. It’s the rice eggs avocado & chili fusion that never disappoints.
However, it is a midweek formula crafted with minimal ingredients. It’s a lifesaver when you’re multitasking and yearning for something delicious and swift. This recipe provides a glimpse into the authentic cuisine of a food blogger when faced with hunger and speed.
A Reliable Savior
I’ve been indulging in some variant of this dish for more than half a decade. It has rescued me from numerous nights of subpar leftovers, unsatisfying takeout, or just succumbing to my own lethargy post-work. As soon as I step in, I’m a ravenous being with a singular purpose.
As if on automatic mode, I can whip this up in 15 minutes as long as I have eggs, avocado, and rice ready—a standard pantry for many of us. A bonus if you possess an efficient rice cooker like mine that prepares 1 cup of raw rice in no time.
The Essence of the Weekday Feast
So what comprises this rapid weeknight feast? Start with some cooked rice—likely leftover from the previous night. Fry an egg, mash an avocado on top, drizzle with soy sauce, add a spoonful of chili oil or my favorite fiery companion, chiu chow oil. Throw in a hearty spoon of chili bamboo shoots (these are not particularly spicy but have a delightful saltiness and a peculiar aroma that I personally enjoy).
These bamboo shoots can be purchased pre-jarred or you can prepare them using my chili bamboo shoots recipe. If you love pickles, give it a shot. However, if you’re sensitive to potent aromas, it might be better to skip this one.
Add a touch of white pepper for a layered heat effect. Stir everything thoroughly with a spoon until everything’s combined (it’s akin to an effortless Chinese spin on bibimbap), and tuck in. (It’s also a wonderful laid-back brunch option!)

Instructions

3 . As the egg gets ready, fetch the avocado. Halve it, remove the seed, and slice it, or simply scoop it onto the rice.
- Add your desired amount of chili bamboo shoots.
- Retrieve your preferred spicy chili oil or chiu chow oil from the fridge. Incorporate a scoop of it as per your preference.
- Drizzle soy sauce over everything. Sprinkle a dash of white pepper.
