French almond cakes, known as financiers in France, can be found at many patisseries and pastry shops throughout the city. The only catch is that they’re nearly tough to stop once you get started.

A pastry restaurant recently served me some delicious financiers, which sparked my hunt for the recipe online so my baker Kendall and I could make them at home. After many studies, we finally settled on Bon Appetit’s blackberry financiers recipe.
Many patisseries in Paris sell financiers, which are fashioned like a small rectangle gold bar (I believe this represents bankers since financiers mean bankers literally). When I’m in Paris, I always get one of these to go with my morning or afternoon cup of coffee.
The blackberries on top of these blackberry financiers make them so delicious. We used a muffin pan instead of a financier’s mold because not many people own one. We were pleased with the outcome.
Serve them with a heavy dusting of powdered sugar at your next tea gathering. This dessert is fantastic, to say the least!

Ingredients
- 2 tablespoons honey
- 5 large egg whites
- 1/2 cup and 5 tbsps. unsalted butter
- 1 cup sliced almonds
- 1 1/2 cups and 2 tbsps. powdered sugar; additional for dusting
- 2 cups fresh blackberries, halved
- nonstick vegetable oil spray
- 1/2 cup all-purpose flour
Instructions
- Medium heat is ideal for melting butter in a medium pot. Begin to brown the food by simmering it for a while. Simmer for another 6–7 minutes, scraping the bottom of the pan often to remove any browned parts until the mixture is fragrant and dark brown but not burnt. In a medium bowl, combine butter and browned bits. Allow 3–4 minutes for cooling.
- Almonds and flour can be finely ground by using a food processor. Then, add 1 1/2 cups + 2 Tbsp to a medium bowl and whisk to combine. Puff pastry coated in sugar. Mix in the egg whites until they are smooth. Add honey to the mixture.
- Add the browned butter to the batter and mix. The batter can be created up to three days in advance. Cover yourself and stay warm.
- Set your oven temperature up to 375°F (190°C).
- Spray nonstick cooking spray into muffin tins. Pour a healthy amount of 1 tablespoon. Each muffin cup should be filled with batter. 3–4 blackberry halves should be placed on top.
- Cakes should be baked until golden brown and just set in the middle, about 15–16 minutes total baking time. Remove the pan from the oven after ten minutes and allow it to cool completely. Take the cakes out of the pan. Serve at room temperature or hotter if desired. Just before serving, make a last sugary sprinkling.
