CHICKEN AND POTATOES SKILLET

Cast iron skillets maintain a high temperature and uniformly distribute heat, ideal for this dish. Additionally, you can use a pan or stainless steel skillet.
Marinate the chicken in a marinade of smoked paprika, Italian spice, extra virgin olive oil, and salt. A well-marinated chicken ensures that it will be juicy, moist, and delectable.
Potatoes are cut into small wedges to ensure consistent cooking on the stovetop.

INGREDIENTS:
CHICKEN
- 1 pound (0.4 kg) chicken thighs, skinless and boneless
- 1 teaspoon paprika smoky
- 1/2 teaspoon seasoning de Italie
- 1 tsp. salt 1 tbsp. olive oil
- 1 tbsp olive oil
POTATOES
- 1 tablespoon melted unsalted butter
- 8 peeled garlic cloves 12 oz. (340 g) red potatoes
- 1/4 teaspoon sodium chloride
- 3 dashes seasoning Italiano
- 1 teaspoon freshly chopped rosemary, optional
- 1 tsp olive oil
- 1 tablespoon melted unsalted butter
INSTRUCTIONS:
1. Marinate the chicken in a marinade of smoked paprika, Italian seasoning, salt, and extra virgin olive oil. Stir well to combine. Place aside.
2. Preheat a cast-iron skillet over a low heat setting. Combine the olive oil and butter in a medium bowl, then add the garlic, potatoes, and remaining ingredients. Cook the potato wedges until browned on the exterior and tender inside, about 10 – 15 minutes. Prepare and set away from the dish.
3. In the same skillet (preferably over medium heat), add olive oil and butter. Pan-fried the chicken for approximately 4-5 minutes on each side and pan-fried the opposite side.
4. Remove the chicken and add the potatoes—season with more salt to taste. Remove from the fire and serve the chicken and potatoes immediately, if desired, with a spicy sauce of your choosing.
