Banana Cream Cheese Muffins

Muffins made with banana, cream cheese, and walnuts are called Banana Cream Cheese Muffins. Muffins made with bananas, cream cheese, and a touch of sugar.

We have been working hard to get ready for Halloween, which is tomorrow.

This year is Baby G’s first Halloween, and he’s going to celebrate it in style. We didn’t dress him up or take him trick-or-treating the last two years because he was too young to understand anything.

He is two years old and can’t stop talking, so we think it’s time for him to participate in some Halloween festivities. He’s going to be the Neverland Pirate.

Everyone at his daycare is expected to bring a Halloween-themed treat for a potluck tomorrow.

These banana cream cheese muffins are a big hit with the kids in his class. Before the party, I ate one of these muffins from the oven and decided to bring it along with me.

Bananas and cream cheese are always a crowd-pleaser.

And perhaps now that the mom is out to bribe all of Baby G’s little friends with some perfect muffins, he’ll become even more popular!

Baked Bree, whom I had the pleasure of meeting earlier this month, inspired these banana cream cheese muffins (I also met with Gina at Skinny Taste ). After seeing Baked Bree’s recipe, I immediately saved it to my recipe box.

Banana nut muffins are famous, but try cream cheese instead of the regular spread.

For the second time this week, I’ve made these banana cream cheese muffins for a party tomorrow, and I’m having a hard time resisting the temptation to devour them all myself.

Those scents are just too irresistible!

Whatever your reason for making muffins, this is an excellent recipe that you should definitely experiment with.

The food won’t stop coming from them, I can assure you of that.

What is the average number of calories in one serving?

  • Each serving of this recipe contains only 321 calories.

Ingredients

  • 1 cup sugar
  • 1/4 teaspoon fine salt
  • 1 1/2 cups of all-purpose flour, spoon, and leveled
  • 1/2 teaspoon baking soda
  • 4 oz. (115 g) cream cheese
  • 1 stick (113 g/4 oz.) unsalted butter, room temperature
  • 1/2 teaspoon baking powder
  • 2 mashed overripe bananas
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup walnut pieces

Cream Cheese Filling:

  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon flour
  • 1 tablespoon sugar
  • 4 oz. (115 g) cream cheese

Instructions

  1. Your oven should be preheated up to 350 degrees Fahrenheit.
  2. The acceptable salt, baking soda, and powder should be combined in a bowl after being sifted together. Mix by beating with a wooden spoon.
  3. Light and fluffy frosting can be made by beating the butter, sugar, and cream cheese for about 3 minutes. Add the egg and vanilla extract to the mixer on a low setting. Stir the ingredients together until well-combined.
  4. One tablespoon of the dry ingredients at a time, add to the wet ingredients in the bowl. Slowly add the mashed banana and mix until all the elements are incorporated into one. Make sure you don’t beat yourself up too much.
  5. To prepare the Cream Cheese Filling, combine all ingredients in a separate bowl.
  6. Fill each muffin/cupcake liner two-thirds of the way full with the muffin batter. Each liner should have a well-formed in the middle.
  7. Fill the well with the Cream Cheese Filling.
  8. Fill each liner about 3/4 of the way with batter. Place a few walnuts in the middle of the top.
  9. Set the timer for 25-30 minutes and bake until golden brown. Before storing in an airtight container, transfer to a wire rack to cool.

Notes

  • This recipe calls for cupcake liners and a 12-cup muffin pan.
  • The original recipe called for cinnamon, but I’ve omitted it from mine.
